I am doing a project, and I was wondering what the process to make chevre is... the milk isn't cold, I want to make this cheese straight out of the pasteurizer (Also, at what temperature should I take the milk out)

Ehh i don't know how to do the goat cheese but i just want to correct you : Chevre is means Goat in french.
So on how to make "chevre" a "goat" ??????
