What do Demonlogist do in the field of demonology.

By definition, a demonologist studies demons. If you're in the field of demonology, then you're a demonologist. That's all about language.
In a practical sense? I don't think you'd make much of a career in demonology, unless it was as an author, an historian, or maybe a priest/pastor.
Now if you're talking about someone who actually communicates and deals with demons? Real, supernatural, living-in-hell demons... then I'm thinking you're gonna have a hard time finding someone like that at all.

they summon demons but doesn't pay too well so they usually quit and become a lawyer or politician
