Sweet and Sour Chicken I

"Pan fried chicken cubes served with a sweet and sour sauce."
Original recipe yield: 4 - 5 servings.

INGREDIENTS:
1 (8 ounce) can pineapple chunks, drained
2 green bell pepper, cut into 1 inch pieces
1/4 cup cornstarch
1 3/4 cups water
3/4 cup white sugar
1/2 cup distilled white vinegar
2 drops orange food color
8 skinless, boneless chicken breast halves - cut into 1 inch cubes
2 1/4 cups self-rising flour
2 tablespoons vegetable oil
2 tablespoons cornstarch
1/2 teaspoon salt
1/4 teaspoon ground white pepper
1 egg
2 cups water
1 quart vegetable oil for frying

DIRECTIONS:
In a saucepan, combine 1 1/2 cups water, sugar, vinegar, reserved pineapple syrup, and orange food coloring. Heat to boiling. Turn off heat. Combine 1/4 cup cornstarch and 1/4 cup water; slowly stir into saucepan. Continue stirring until mixture thickens.
Combine flour, 2 tablespoons oil, 2 tablespoons cornstarch, salt, white pepper, and egg. Add 1 1/2 cups water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces, and stir until chicken is well coated.
Heat oil in skillet or wok to 360 degrees F (180 degrees C). Fry chicken pieces in hot oil until golden. Remove chicken, and drain on paper towels.
When ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. Pour hot sweet and sour sauce over top.

Fry the chicken first. Top w/ sauce at the last minute.

Do not use soy sauce in the S&S sauce or it will be a dingy, dark brown color. Use salt instead for flavor.

Toss in some pineapple chunks and some Bread & Butter pickle chunks into your sauce. Makes it yummy and have some texture!

I like the recipe in the Betty Crocker cookbok, of all things. Just sub the soy for the salt in the sauce.

I also like this one. I just use chunks of pork loin instead of those "chops" called for.

Sweet and Sour Pork

1 pound pork rib chops
1/2 cup all purpose flour
1/4 cup corn starch
2 tablespoons soy sauce
1/2 cup rice vinegar
1/2 cup sugar
4 cups oil
a little ginger, scallion and salt

Cut meat into the size of small mushrooms. Cut ginger and scallion into very find strips. Marinate the meat with soy sauce, salt, ginger and scallion for 15 to 20 minutes. Mix the flour and corn starch with one cup of water, then mix together with the pork. Let every piece of pork is coated by the batter. Put the wok on high heat, pour oil in and heat until it's half warm. Put the pork chops in one by one; fry until a crust forms. Switch to medium heat, cover the wok and fry until the crust is golden brown. Take the meat out and drain the oil. Leave about two tablespoons of oil in the wok. Put the vinegar and sugar in the wok; stir slowly until the sugar melt. Switch to high heat, put the meat in and stir quickly so that all the pork chops are covered by the sweet and sour sauce.

If you want nice sweet and sour chicken, I had one suggestion for you. why not you can try sweet plum chicken.

you need :
1 whole drumstick ( d-bone )
flour
egg
salt
pepper

for Sauce :
1 plum sauce ( can get at chinese shop )
sugar

Marinade the d-bone drumstick in salt and pepper and leave for a while then you can dip the drumstick meat on the flour ( make sure is coated all ) and then dip it in a beaten eg ( also make sure coated all ) then put the whole peice of meat in to very hot oil for deep fry until golden brown and then take out and rise the oil ( you can cut into thin slice if you want to )

As for the sauce pour some plum sauce in bowl and mix with some sure sugar. The pour in the pan and stir low heat for a while ( no oil added ). then you can pour on your chicken or you
can eat the deep fried chicken with the dipping plum sauce.

SWEET AND SOUR CHICKEN

THIS IS SO EASY!


2 - 4 servings

--------------------------------------------------------------------------------

2 - 4 boned skinless chicken breast halves
1 medium or 1/4 lb. onion, halved
1/2 green pepper
1/2 red pepper
4 stalks of celery
8 to 20 oz. can pineapple chunks, drained
1/2 to 1 C sweet and sour sauce, boughten or homemade*
1 t soy sauce
1/4 C cashews or peanuts
Hot cooked rice or rice noodles
* Easiest Sweet & Sour Sauce recipe

1. SLICE all vegetables and chicken into 1/4 inch wide strips. Using the food processor works great for this!
2. MICROWAVE combined ingredients in a 2 quart microwave safe, covered, casserole dish on high for 6 to 8 minutes or until no pink remains in chicken, stirring once. Drain juice well.
3.STIR in pineapple chunks, sweet and sour sauce and soy sauce. There is a really easy Sweet and Sour sauce recipe on this site!
4. MICROWAVE, again, on high 2 minutes or until mixture is heated through. Stir in cashews or peanuts.
5. SERVE with rice or rice noodles and sprinkle with chow mein noodles. For dessert serve fortune cookies! Makes 4 servings.
6. SUGGESTION: One can add mushrooms, tomatoes, green onions, garlic, celery, chicken seasoning and/or chow mein noodles! Or, try using pork instead of chicken!

Get some sweet and sour sauce add chicken pieces. Boil noodles. Mix together when done. Viola!

Cooking is really not that hard.
