I don't cook often so the easier the better, but I want to impress. He's from Texas, so anything that might be from there would be good, but not a must. Any suggestions/recipes/websites? Any help would be appreciated.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good wine and enjoy.

Thing to remember the date is not all about the food. I am an awesome cook but I so much appreciate the time and effort spent on making me something simple. It's about company and conversation. Plus you don't want to be hurrying about in the kitchen right before he gets there. It's a bit more homey with a bit more togetherness than saying come on in, here's your wine, and let the date commence like going to a restaurant. Pasta is the way to go. Get some tricolor tortellini from the refrigerator section plus the alfredo next to it. Preslice some mushrooms. Lightly cook some asparagus and chill it down. Chop some garlic. Even a bit of parsley. Put all of this in the fridge. When ready saute some shrimp and scallops adding the mushrooms about halfway through then add the alfredo plus splashing some of the wine you are drinking in it. Add the tortelini that you had cooking and the parsley. Stir and serve. It will look like you really know what you are doing. Plus add some predone garlic bread from the freezer section.

Mexican Steak With Chimichurri Sauce
Prep time includes 30 minutes of marinating. Flavorful garlic and herb sauce with smokey heat. Goes great with mashed potatoes and a salad. Sauce also goes nicley on burgers.
2 lbs boneless beef sirloin (1-1/2 inches thick)
Marinade or Sauce
2/3 cup olive oil
1/3 cup parsley, minced
1/3 cup cayenne pepper sauce
3 tablespoons lemon juice
1 tablespoon worcestershire sauce
2 teaspoons dried oregano leaves
4 garlic cloves, peeled & crushed
6-8 servings

1. Blend all marinade ingredients in a food processor.
2. Taste, and adjust seasonings if desired.
3. Score each side of the steaks 1/8 to 1/4-inch deep.
4. Reserving 2/3 cup marinade mixture as sauce, place steak in large resealable plastic bag with remaining marinade mixture.
5. Seal bag and marinate in refrigerator for at least 30 minutes.
6. Grill steak over hot coals (discarding marinade) 10 minutes per side for medium-rare or to desired doneness.
7. Let steak stand 5 minutes.
8. Slice steak diagonally.
9. Serve with reserved sauce mixture

INGREDIENTS
1 tablespoon extra-virgin olive oil, once around the pan in a slow stream
1 tablespoon butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 can crushed tomatoes (32 ounces)
Coarse salt and pepper
16 ounces pasta, such as penne rigate
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn
Serve with:
Crusty bread, for passing

Heat a large skillet over moderate heat. Add oil, butter, garlic and shallots. Gently sauté shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan (3 turns around the pan in a steady stream will equal about 1 cup). Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.

While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.

Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.

Lasagna and salad. They're both very simple to make yet you can add so many things to either one that it seems like it took a ton of effort. If you decide on this, don't forget to make garlic sticks/bread and a dessert. Blond brownies are my suggestion. Good luck!

If you dont' know how to cook, learn. It's a great talent. You might want to go to the store and get a pre done pizza crust with sauce and put his favorite toppings on it. (like boboli pizza crust or other pizza crust.) along with his favorite cheese. It's easy, fast and he'll love it.
