I used to do things like make taco's one night, put just enough meat aside before I cook and season to flavor some jarred spagetti sauce, which you can buy for about $1.50 and make spagetti the next day.
Buy your chicken breasts in the large frozen bags instead of individual packs. Campbell's soup cans, such as Golden mushroom, Creamy Chicken, Creamy Mushroom have recipes right on the can that usually call for just the soup, chicken and rice.
Go the www.bisquick.com and look under: Main Dish Recipes
Impossibly Easy Pies. You can then buy the generic brand Bisquick and make some of those recipes. Taco Pie and Lasagne Pie are really good. They are pretty inexpensive to make.
I always keep eggs on hand, leftovers are great to throw into scrambled eggs or omletts.

Take 2 boneless, skinless chicken breasts, thawed. Pound them flat with a mallet (a real cooking mallet, not any hammer). Layer on each of them one piece of ham, one piece of swiss cheese, and one slice (about 1/4 inch) from a brick of cream cheese (or just spread some on). Wrap the chicken around the ham and cheeses, turn over (so the flap is down), and insert a toothpick to hold it all together. Bake on a pan at 350 degrees for 25-30 minutes. This is a cheap way of having Chicken cordon Bleu. Serve with green beans or peas, and stovetop stuffing.

Oh yeah, I love leftover spaghetti (just spaghetti with ground beef) my mom makes one big batch, and my family eats for like 2 days (sometimes 3) spaghetti. I love it. Try that concept. Make a big batch of something and freeze it. You can save some money by doing simple things like that.
