Brie Stuffed Jacket Potatoes
In an internet quest for the recipe for Brie-mashed potatoes, I came upon these little gems. I was only baking for two, so only used two potatoes, however, I forgot to scale down the remaining ingredients, which were slated to feed four (using 4 potatoes). My husband and I both agreed that these were the best things upon the plate tonight. From igourmet.com. Prep/Cook time does not include time for baking the potatoes.
2 baked potatoes
3 ounces brie cheese, de-rinded,room temp
1/2 teaspoon salt
1 egg yolk
2 ounces butter, room temp
freshly chopped chives
2 servings
1. Slice off the top of each potato and scoop out the flesh, leaving behind a potato skin jacket ready for filling.
2. Mix together potato flesh, Brie, salt, egg yolk and butter.
3. Beat until well mixed, and return mixture to potato skins.
4. Place upon a baking sheet, or preferably a baking stone.
5. Put into a 375-degree oven for 15 minutes, or until filling is golden brown.
6. Sprinkle with chopped chives

In addition to the other fine folks who have answered you: In the old days, before microwave ovens, If I wanted a quick(er) baked potato, I would drive a washed, new nail into the middle of the potato. Bake in oven. Or toaster oven. the heat of the oven goes through the metal of the nail, and cooks it reallly fast. Use a fork to test when it's done. If not hard, it "gives" it's probably ready. of course, NEVER put metal (or nails) into microwave. and of course, don't use rusty nails! My son's school serves "baked potato bar" on occasion. As the previous person suggested, scoop out the insides, mash and add fun ingredients. Or as they do at school, don't scoop out the insides, don't mash... siimply top with some grated cheese, bacon bits, leftover barbeque chicken, salsa, um, little leftover steak bits, whatever you have on hand. Personally, I just like to mush some butter in the jacket, snip some chives from the garden and eat it in hand!! Next time, ask mum to write it down!!!!!!!!!!!!! good luck! e.t.

I will try & make this real easy for you.
1) wash and pat dry the potato,
2) poke a few holes in the potato w/ a fork
3) bake in microwave for about 9 minutes, turn potato over and bake for another 7 until firm but not hard
4) rest the pot. on plate on counter until you can handle without burning your hand.
5) next, carefully slice the pot. lengthwise and scoop out the inside potato in a bowl. Mash with fork-- if only baking one potato- or use an electric mixer if baking several pot. at once.
6) add some milk (1/3 cup apprx.), 2 tbls butter, salt and pepper, and a bit of onion and garlic powder if you like, too.
7) mix well, but not too long or will turn starchy
8) stuff the potato peel, add pat of butter on top of each half and run fork across for nice lines
9) bake in oven 375 degrees for about 15 minutes until lightly browned on top.
