how about magic flourless p-nut butter cookies
Ingredients
1 cup peanut butter, creamy or crunchy
1 1/3 cups baking sugar replacement (recommended: Splenda)
1 egg
1 teaspoon vanilla extract
Instructions
Preheat the oven to 350 degrees F. Grease a large baking sheet.
In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir
well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared
baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross
design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some
of the remaining sugar replacement. Cool slightly before removing from pan.

this rapberry pie is wonderful and refreshing.
You'll need a graham cracker crust. If you want to buy one you can find sugar free crusts in your diabetic aisle.
Or just substitute splenda for the sugar when you make the crust.
Now for the filling.
1 cup of water
1/4 cup of corn starch
1 cup of splenda
add this to a good sized pot and mix before heating so that all the corn starch is incorporated.
cook on medium heat until mixture becomes thick and opaque.........about 5 minutes.
remove from heat and add 1 3oz. box of sugarfree raspberry jello.
next you'll add two pints of fresh or frozen raspberries and give a gentle stir as not to break up the berries to much but you want them to be covered in the mixture.
pour into the crust and cover. chill overnight
top with coolwhips new "sugarfree" whipped topping and if you'd like you can garnich with a few raspberries and some mint.
this is so good. I hope you try this and enjoy

Sugar free chololate cream puffs
Ingredients
Cream Puffs
1 cup water
1/2 cup margarine or butter
1 cup all-purpose flour
4 large eggs
Filling
1 cup heavy or whipping cream
1 Tablespoon unsweetened cocoa
1 package (4 servings) chocolate flavor sugar-free instant pudding and pie filling
1 1/4 cup milk (2% or better is best)
Directions
Preheat oven to 400°F.
To prepare cream puffs, heat water and margarine until margarine melts and mixture boils. Remove saucepan from heat. Add flour all at once. With a wooden spoon, stir vigorously until mixture leaves side of pan and forms a ball. Add eggs, one at a time, beating well with wooden spoon after each addition until batter is smooth and satiny. Drop batter by tablespoonfuls onto greased cookie sheet, making 12 mounds.
Bake 30 to 40 minutes until golden brown. Turn off oven. Let puffs remain in oven 15 minutes. Cool on wire rack.
While cooling, prepare filling. In a small bowl, with mixer at medium speed, beat cream and unsweetened cocoa until stiff peaks form; set aside. In a large bowl, prepare pudding as directed on package, using only 1 1/4 cups of milk. Using a rubber spatula, gently fold whipped cream into chocolate pudding.
To assemble, carefully slice cream puffs in half. Remove loose, uncooked batter. Fill puffs with whipped cream mixture and replace puff tops. Refrigerate until served.
