Veggie burgers (*of the quorn/Linda McCartney type, not the ones with chopped up veggies in 'em - too like potato cakes otherwise!) , fresh greens(include some nice reds like radicchio etc), alfalfa sprouts, oyster mushrooms (lightly cooked in a little soya milk with scallions and tamari), thinly sliced red peppers and chilli sauce. Add a small dolop of créme fraiche and some fresh parsley.

Potato cakes are okay, but they can be a little bland - so the other ingredients add differing textures, colour and flavours to compliment and contrast.

you could have used the eggs to either bind the potato cakes, or you can make an egg wash and use that to panne the cakes then deep flash fry them (flour them up, run through the egg wash, then through breadcrums), makes them a nice golden brown colour.
I would probably serve them on a dressed salad, probably rocket, fine sliced red onion, roasted pinenuts and some parmesan shavings, with either a basic balsamic vinegar or reduction, or a simple french dressing.

Oh men...haha so silly. Potato cakes are good with eggs. It would probably be better as a dinner opposed to breakfast

Because of their texture it would be better to serve them with something crispy like bacon. Nothing too soft because the inside of the potato cakes is soft.

serve smoked salmon and sour cream along side. some people really like apple sauce (not me) some like to top potato "cakes" with sour cream and caviar. you could arrange a variety of things such as shredded cheese, sliced green onions, chopped tomatos, crumbled bacon.
Potatos go with anything really and "yes" I think eggs would be great too.

eggs are good, but this is great:

after having chili or tacos, the next day with the potato cakes put the leftover chili or taco meat on top, cover with cheese and microwave to melt it. salsa goes good on it, but isn't needed.

potato cakes are wonderful alone or with almost anything!

Before my diagnosis with diabetes we ate them two or three times a week.

I would be willing use them anytime potatoes are welcome. Some traditional meals would probably seem odd but I can only think of a few times when I wouldn't be glad to have them on my plate at any meal. I'm sure you know what I mean, Christmas, Thanksgiving, Easter, and then only because it would seem odd, not because they wouldn't be good with the meal...

BTW, I have eaten them with nothing else. I do love spuds.

Depends to what your tastes are like. I have them with eggs but my favorite is toasted bread, with topped with potato cakes and bacon, with brown sauce.

At the German restaurant where I work, they serve goulash over potato pancakes with a side of sour cream. The goulash is like a beef stew. It's very popular, people really like it.

when i fix potato cakes, i serve them by themselves. just a little ranch dressing. i'm sure eggs would be fine if that is what you like.
