(I learned this from a baker), get a spray bottle filled with hot water. Spray and run the spatula over the icing. There is also the VIVA TOWEL trick , but I have not tried that one yet.

It's usually in the tools, but the type of frosting and whether or not you've allowed the cake to cool properly can also be a factor. Use of a cake spatula for frosting is best, it is metal, easily cleaned and long enough for an even spread. Most of the canned frosting's are whipped and end up being too thick, a home made butter cream is better and easily done. Allow the cakes to rest 10 minutes after removing from the oven, then turn out onto a cake rack to cool completely. You should get better results if you do this. As far as frosting goes don't be afraid, I know presentation is suppose to be the key to good eating. But, a badly frosted cake shouldn't be the end all of the meal. When I first started baking, many moons ago, I couldn't understand why the cakes on TV looked so polished and perfect. My mom later explained that they were using fondant, not icing! LOL
You can purchase special tools to achieve a smooth icing, or you can use a quick-pour fondant or a rolled fondant. You can buy these at a crafts store like Hobby Lobby, or online; just Google "cake decorating supplies".
I agree with the above poster, though. As long as it doesn't look like you dropped it on the floor, taste is the important thing!

Remove cake from the cake pan and transfer to your cake plate. (If you have a problem with the cake shifting around, put a glob of icing on the plate first.) Once you've got the icing on the cake, take a spatula (the long, narrow, metal one - not the rubber "plate scraper") and dip it in HOT water. Run it over your cake from one side to the other - if you need to repeat with the hot water, wipe the blade clean first and try again as often as needed until you get the finish you desire.
