My grandmother (who was of Irish/German descent & who passed away 19 yrs ago) used to make a potato candy, but no one in our family has the recipe. I remember she would grate the peeled potatoes, and that we used powdered sugar. I'd like to find the recipe for our next family reunion.

Potato Candy

The main ingredients for this old fashioned candy are mashed potato and confectioners' sugar. Salted peanuts can be substituted for shredded coconut for a different taste. Best to use left over chilled mash potatoes. This candy taste just like a PeterPaul mound,you can put an Almond on top of each candy ball and it will taste like an Almond Joy.
1 lb semisweet chocolate, chopped
1 cup mashed potatoes
1/2 teaspoon salt
2 teaspoons vanilla extract
2 lbs confectioners' sugar
2/3 cup flaked coconut

1. In the top of a double boiler, heat chocolate, stirring occasionally, until chocolate is melted and smooth.
2. In a mixing bowl, combine the potato, salt and vanilla and the coconut. Sift the confectioners sugar over potato, stirring and adding about 1 cup at a time. Mixture will liquefy when first sugar is added then gradually begin to thicken.
3. When it becomes the consistency of stiff dough, knead it even though not all the sugar has been added.
4. After kneading, cover with a damp cloth and chill until a small spoonful can be rolled into a ball. Shape in small 1/2 inch balls. Dip balls in melted chocolate then roll in peanuts or coconut.

MASHED POTATO CANDY

Ingredients needed:

* One-half cup of leftover mashed potatoes (not instant)
* 1 teaspoon vanilla extract
* 28 ounces powdered sugar (1.75 sixteen-ounce boxes)
* Smooth peanut butter

In a mixing bowl, combine the leftover mashed potatoes, the vanilla and one cup of powdered sugar. Set the remaining powdered sugar (about 20 ounces) aside.
Stir until the sugar is dissolved and the mixture becomes a thin syrup. Continue adding powdered sugar into the mix, while stirring thoroughly. As the remaining sugar is added, the mixture will become very stiff and difficult to stir.

Remove mixture from bowl and place on a sheet of waxed paper that is coated with powdered sugar. Dust a rolling pin with powdered sugar and roll out the mixture like a pizza crust (about 18 inches in diameter).

Using a spatula, spread a generous amount of peanut butter on the mashed potato candy and curl it up tightly, like a jellyroll. Wrap candy in waxed paper, and refrigerate for three or four hours. Cut into half-inch slices and serve.
