Caviar are the eggs of a fish called Sturgeon. They make caviar from other fish as well but this is the real thing. It's not poo!

YES - it is. do not regard the previous respondents - they would not know caviar from crepes.
Caviar collectors follow the sturgeon around with nets and when he defecates - WHAMMO - they collect the stool (caviar). Each fish caviars once a day, and the collected specimens are put into little round cans for the hoity toity to spread on Ritz crackers.
