These are just some of the variations of omelets I make:
# Mushrooms with grated cheese or tomatoe.
#Sliced sausages & tomatoe.
#Slice luncheon meat
#Fry chopped onion in butter, when done add little salt & pepper to taste then scamble eggs with it or make as omelette- another variation of this is to add a teaspoon of tomatoe paste with the onion and stir - then add eggs. ( this can be eaten with rice by the way)
# Chives & mushrooms
# Spring green onions chopped.( same as above with onion)
# Spaghetti Omellete.

Spinach, mushrooms, onions, broccoli, all go very well in omelets Try one veggie at a time or use a little bit of different ones together...such as tomato and spinach or onions and mushrooms...as well as cheese...try cheddar or feta (if you like it) Also, you can make frozen potatoes on the side...
Another thing you can make is Fried Rice...Fry one egg and break the yoke...spread it around in the pan so it's really thin...add 2 cups of cooked rice (leftover a day or two is best)
mix everything together and add soy sauce to taste...(meaning start with a little and keep going until it tastes good to you)
Easy and delicious...

Now you are making me hungry. Tried green peppers with the omelet. Also fried onions and sausages can also be cooked ahead and then meld in with the egg mixture. Try cresent dinner rolls cooked in the oven then put omelet ingredients overtop to add more to the menu.

canned asparagus, mushrooms, and provolone cheese is good. Get a cookbook like A Man, A Can, and a Plan. I think that is what it is called or the Can Opener Gourmet. Learning how to cook might help you to land a partner so you won't have to eat omelets and rice. :)

Try to add some fresh mint leaves in your tomato omelet.
I like omelet with potato and a lot of cheese and some ham cut in small pieces

Stop living so closed and get some recipe books and learn to cook more that rice and omelettes. Be bold and experiment.
And by the way almost anything is good in an omelette - try ham and cheese - bacon and tomato - ANYTHING

any leftovers are good in an omelet.
you may also want to try a fluffy omelet by using beaters
in the egg/mix w. water, brown bottom slowly on top of stove,
and place in an oven to finish cooking top. 300 degrees, just
a few minutes, keep checking it.
try it, it's great.

Off path you'll be able to! You can mix any style of parts in an omelette simply test what you favor! I adivse frying the mushrooms and tomatos for a little earlier than pouring the egg in even though :)

TThere are so many things you can add to and omellet. Try some of these:
Ham, Bacon, Cheese, Onion, Green Pepper, Pepperoni, Salami, Spam, Fried Potato, Smoked Salmon, Mushrooms, and the list goes on and on. Experiment on your own ading things you like.
