This sounds like you were not normal when you did those things. It would be better to say "Today I did a lot of things that I can not normally do."

Techincally it should be "Today I did a lot of things that I normally cannot do." Though in my opinion it still sounds a bit off.

What was so special about today that enabled you to do those things? It is grammatically correct though. except for the One:

Today, I did a lot of things that I normally don't do.

"Can not" implies that you magically learned how to do it, as you never could before.

"Don't" (or do not, if you choose) implies that the opportunity arose for you to do more in your day than you regularily attempt to do.
