Just about any vegetable will go well with cod fish. It depends on your likes and dislikes.
I personally would make a red/yellow/orange bell pepper saute with onions & garlic. Heat olive oil in frying pan, saute onions, add garlic and saute. Add the vegetables for cook for a few minutes, stirring occasionally, until tender. (sometimes I add mushrooms, if my daughter is not joining us-she hates shrooms).

Asparagus also goes well with cod, as does steamed broccoli or cauliflower.

heres a casserole hope this helps
Ingredients
1/4 cup chopped onion
2 cup white sauce
1/4 tsp paprika
1 cup corn kernels
1 tbsp butter
1/2 tsp pepper
2 cup flaked codfish (fresh)
1 cup cooked vegetables


Directions

Fry onion in butter until tender. Combine with other ingredients and
season with salt to taste. Pour into greased casserole and cover with
pastry dough. Bake in 425f for 30 minutes.

Depends on how you cook the cod. If you deep fry it in batter then an old classic is mushy peas. If you roast it try it with roasted Red Peppers and garlic and a little fresh tomato sauce.

Layered potatoes, pots and onions layered in an oven proof dish seasoned well with s&p sprikled with grated cheese and milk poured in cook in oven till potatoes are cooked and milk has thickend to make a sauce, then serve with carrots glazed eith butter and parsley, and blanced green beans, yum yum.

Why cod - don'y you know the stocks are in serious decline - try coley instead - similar flavour more sustainable.

Beetroot is great with fish.
