why are most ceilings white?

Because it is cheaper on the cost wise when the house is first built. They can just spray from ceiling to the wall instead of brushing in all the edges. After awhil people don't think too much of the ceilings to repaint. Also it is used to make smaller rooms little bit bigger. Now a days people are putting more colors on the ceilings but in the bigger areas and usually they are light tones of creams , etc. Mainely it was to save money . Also white hides away any defected work, colors and sheens brings out all the mistakes.

For the light to reflect, ceiling look higher...and give you a feeling that you have a bigger place than what you actually paid for. White from the ceiling reflects and lights up the whole room evenly.

My ceilings are either the same colour as the walls or a slightly darker shade

Because most people don't have much imagination. Back in 1977 I painted my bathroom ceiling a dark green, everybody loved it.
