I'm not very familiar with Scottish meat products and the average Juan isn't either. Maybe the problem really is how to make it known to more people so you can have a market for it. Join some of the food trade shows at the WTC, that's what Australia and the US does for their meat products. I've tried ostrich meat in one of the trade shows and that's probably how they discovered that there's a market for it.

You don't mean haggis, do you?

Personally, doubt if they would take to it at first. Maybe if you drown the meat in vinegar and soy sauce like they do. Oh yeah, the patis too (fish sauce). And you gotta serve it with rice, whatever it is it has to come with rice. And it's gotta be something they can eat with their hands. Can't cost more than 25 pesos per serving.

Good luck.
