diamonds are pink due to a structural anomaly arising from "plastic deformation" during the crystals growth. This is the rarest type of diamond, although now pinks can be produced artificially.

Impurities in the diamond give it color. A pure diamond is colorless. Depending on the type of impurity will be the color that it is.
