The University of the South in Sewanee, Tennessee has produced more Rhodes Scholars per capita than any other college in the US. This is partially because the academics are very rigorous there, and partially because there is such a sense of community between the students and the faculty.
Although many of the students are not even Episcopalian, All Saints' Chapel is the center of campus activity, even though it is hardly the geographic center of the 10,000 acre campus atop the Cumberland Plateau. Professors often take their classes out into the quad next to the Chapel on fine days. The University Choir is very popular. It tours a different part of the country every year, then tours England on the fourth.
Professors and honor students still wear gowns to class. Between the gowns, the gothic architecture, and the bells from Breslin and Shapard Towers, the campus has a distinct "Harry Potter" feel to it. Students look forward to their senior year more than they did their freshman year, and the alumni are very loyal.
Sewanee students are known for working hard and playing hard. They may be drunk on Saturday night, but they make it to chapel on Sunday morning. The school is religious, but not prudish. Art classes have nude models and the school used to sponsor an erotic film festival every year. There is a firmly held belief in full freedom of inquiry, inside the classroom and out.
The School of Theology usually has about 70 students somewhere in the three-year M. Div. program. It is famous throughout the Episcopal Church for producing an educational program for lay people called Education for Ministry. The "theologs" or seminary students tend to be middle aged, often coming from successful careers in other fields.

They are a Baptist college and seminary based in Grand Rapids, Michigan. But they also have some excellent majors in business, education, and human services.

I hear that Andrews University is a very good one. I know some persons who went there, and they speak highly of it.
Worth considering, if it meets your criteria.

My friend went to Oral Roberts University in Tulsa and loved it. I don't know if it's the best or not.
