Ok... if you are everything you eat, and I were to eat you... I would be you!

Right?

That's not exactly what the expression means, although it may sound like a clever excuse for cannibalism. The idea is that you the things you take in (through all your senses) contribute to the formation of your identity. Things like the music you listen to, the TV you watch, etc. So, more likely, if you were to watch Seinfeld all day, you would indeed find yourself talking like Jerry Seinfeld. What a funny world.

Well, no, not really, because you would have to literally consume a person's soul to BE that person, and even then, your body would still be the shell for your own soul and two souls just can't merge like that, it's against the Laws of Nature but these teachings are way over your head so I'm going to end this here.

You are not stuck anyway!
We (human) are not what we eat!!
If you were to eat me, what of me will be eaten by you?
Eating naything will be the matter getting digested in your system and as such it will be my flesh and even bones!
Again the part of me in terms of 'life' could'nt be eaten by you, can you? No you can't!
So in any case, you cant't be me at any situation, understand?

Yes precisely, you would be me till you pooped me out, then you'd be stuck again and have to search for a new victim. It's a vicious cycle really, trust me on this one. *burp*
