That would be Empire Strikes Back for me, for several reasons:
1) It was the first movie I went back to see multiple times at the theatres.
2) Back before "spoilers" were so easy to find, the whole "Luke, I am your father" plotline totally caught me off guard. Even ending it on somewhat of a down note I thought was a pretty daring thing to do, and made me even more hungry for the next chapter.
3) I have been a film score fan ever since I remember, and as good as the music was in Star Wars, he far exceeded it in Empire Strikes Back.
4) You also have to remember, "franchises" were new (actually, Star Wars started them), so the idea that the story was continuing from the first one, and still left some loose ends for Return of the Jedi really took Empire Strikes Back to epic proportions, so much more than Star Wars.
5) It focused in greater depth on Han Solo, who was my favorite character from the first movie. When they froze him, I couldn't believe it.
6) It did a great job of expanding the mythology from the first movie (Yoda, hint of "another", aforementioned Darth/Dad, etc).
7) Best comedy relief of the whole series (the MIllenium Falcon's mechanical problems, Vader running through commander after commander, etc)
8) I think that as well as Empire was written, you could feel a drop off in the writing on Return of the Jedi (Ewoks, ARGH--they were Wookies in the original treatment but they couldn't afford to do that, plus Lucas thought they'd be a cute addition for the kids, sheesh!), and it only got worse in the prequels. (I mean seriously, other than the final light sabre battle in Episode I, does anyone bother watching that movie again?)

Empire Strike Back
Reason because it looks like empire winning; look over for the good guys. It more developed than the first star wars.

Empire Strikes Back (A close tie with Return of The Jedi)
The whole concept of the film, from visuals to characters and a decent plot.

Original Star Wars. I am just old school and like the original because it takes me back to my childhood.

Has to be one of the classics. THe new ones are cool with their visuals but they lack dialogue, plot and character development. Return of the Jedi is probably the best, then A New hope, then Empire strikes back

Episode III - It was the culmination of everything you love about Star Wars. I love watching the original three first, then watch the new three just so Ep. III is the final film. The final battle is the best duel ever!

Episode IV, you can't beat the original! Although episode III was great, too. It really tied all the loose ends together. Episode I just seemed like one very long merchandising scheme.

Empire Strikes Back. The whole Darth Vader - Luke Skywalker thing. Oh, who am I kidding with trying to be vague? "Luke, I am your father."
