The girl in the pink coat is actually a real person, who is alive today. The person who wrote Schindlers List was a friend of her family's or something like that. In the movie, the girl died, but later when the movie came out, the real girl in the pink coat saw it, and knew he was portraying her. When they met back up, he confirmed this.

Remember also, that he notices the coat again when he's looking at the piles of bodies to be incinerated... it sticks out and really affects him emotionally.

Because he realize that these peole are human beings and that is when he decides to help them out. I think that was the turning point that indicates that, even though they were all Jewish, each one was an individual in himself. That is what I think.
