For instance, if I am looking to research "Toyota," as soon as I type the letter "T," everything that I have previously searched for (that starts with a "T") will show in the search bar options. I want to turn this off. How?

It depends on what search you are using and what browser.
In most cases all you have to do is clear your browser history.
Also, (depending on what browser you are using) if there is a feature called "Auto Complete" - turn it off or UNcheck it.

If you give more info., you'll get a more complete answer.
