it's under itunes "Preferences" (under "Edit" for windows version)
click on "Advanced" - click on "Burning" - check "mp3" on "disc format" -- your itunes music will burn as mp3 files.

You probably mean ripping right? anyway ITunes automatically converts to mp3. If youre using a mac (Which Sucks!) you're screwed. But if youre using a pc then go to your local pc shop and ask for a storage upgrade(If you have a Dell which also sucks you're also screwed as with any othe branded computer) Ibuild my own computers so I can actually upgrade some time in the future.

When deleting songs from your computer make sure the ipod is not plugged in the computer, this way you will only delete the songs out of the computer not the ipod.
