Likely some cave man or cave woman saw another animal eat a bird's egg. Other birds will raid a nest and eat the egg or the chick if they can manage it. Ferrets, snakes, skunks, and many, many other omnivorous creatures eat bird eggs as well. So our ingenious cave ancestor decided to try it for himself. Or herself. Women are more interested in gathering new types of food. Men just look for something to hit on the head.
It would be generations later before they discovered that birds could be tamed if they were given a little food, or could be captured and kept in a cage for future use. During that period, a bird laid an egg and the light went on! It would be many more generations before the bird they captured evolved into a chicken, and laid more than the three or four eggs a year that normal birds lay.
But we have no idea who that first adventurous person was, or even what continent they lived on. Likely, it was Lucy, the earliest humanoid known, who lived in Olduvai Gorge, in South Africa. Shall we give her the honour?

His name was Norbert Colon. He lived in 12th Century Armenia and stumbled upon the idea whilst living in the chicken coop after his wife had thrown him out.
The first fried egg was eaten just 200 years later in the Vatican city by Pope Benedict who enjoyed them so much he invented Eggs Benedict and passed a law forcing the people of the city to eat fried eggs every Wednesday - rather like the traditional fish on Friday. This tradition continued unabated for the next 300 years and finally stopped following a serious outbreak of Salmonella in 1730.
Ofcourse since then eggs have come a long way and can be found in many exotic forms including poached and scrambled and more recently 'on toast', some people even eat them raw to cure hangovers - but thats just an old wives tale, some people will believe anything!

We found out we could drink cow milk when calves did it too. I suppose the rest was just seeing who could be the most daring to do it. As for chicken eggs, I think something like that could only have happened by accident.
