Actual picture-type hearts or just something that people will look at and say "Aw, it's a heart!"
If it's the first, there should be a bar of smilies you can choose from. If the second just type <3.
Sometimes if there is a valid smilie for a heart, <3 will actually be replaced with a heart symbol.
EDIT: Hm, I didn't know there a text-based heart symbol... well, ask these guys, since they know what they're doing.

You mean this <3 little heart? Its simply the < and 3. Other symbols are programmed into the programs.
