I love cox apples but mostly buy gala as they are cheaper. We don't get much choice where we live now. I only ever see about 3 varieties.

Pink Lady's are excellent. I don't like apples to be too sharp.
Stewed apples with a sprinkling of cinnamon is very underrated too.
