The best chimney I found for my wood stove, when I installed it, was one made of stainless steel, double walled, with a layer of asbestos fiber inbetween the two layers. I could build a roaring fire in the stove and never feel a thing on the outer layer of the chimney. However, it's quite expensive. Not as expensive as a chimney fire though. You would need to check your local building materials stores or fireplace sales outlets.
