First thing is stay in the right hand lane of the yellow or white lines on the road. I know many people who have been hurt or killed because they forget to adjust the side of the road they travel down.
Two, take it easy in the larger cities. Folks can drive like nutters out here. Don't worry about being honked at, its the typical idiot reflex of Americans. If you become lost or disoriented, pull over to a safe place. If you don't like the looks of a place, move on to one you do like. People are equally as happy to help you as to rob you in some areas.
Three, pay attention left and right as well as front. Never worry about what is behind you.
Just scan left and right two or three times a minute. It may sound silly, but it is a technique our bobbies use and it really does keeps your accident risk down. Its called, "Playing heads up."
Finally, have fun. Florida is a fun place. Feel free to e me with any questions about fla. I am living there.

Traffic rules are somewhat different then in Europe. You can turn right an a red light, when it is not allowed a sign is posted saying "no turn on red". The lager roads have the "right of way" over the smaller roads. When you do not have the "right of way" a stopsign is posted. You do need to STOP!
Cars can overtake you from right AND left! Most people do not use turnsignals when changing lanes. The do not leave much room when changing lanes.
When crossing a 4-way STOP)street, the car that is there first has the right of way.
On every (big) street signs are posted telling you the speed limit, but you will notice that most people go slightly over that limit. Be extra carefull when approaching roadworks.
Have not seen any roundabouts there!
MUST SEE: go visit the springs in northern Florida. go "tubing down the itcjhetuknee-river (do not know if this is the correct name). Really fantastic!
MUST BRING: sunprotection! I got badly burned 3 weeks ago on holiday!

Really great suggestions by the other posters...just wanted to add that IF you HAVE to drive I-4 (or I-95) keep as close to the posted speed limit, and stay in the far right lanes, as people drive like manics...even better, in congested areas (Orlando at rush hour), is if there are more than 3 lanes, drive in the middle lane or the 2nd lane from the right and stay at or just above the speed limit, because there are cars merging/exiting onto/off the interstate from the right and people going around you on the left...can be intimidating if you are not use to the frenzy...

Bike-Toberfest is the second week in October this year. Watch out for the Motorcycles! There everywhere. Other than that, obey the traffic laws and your cool. Seat Belt Law is mandatory! Good Luck, and have fun in our Beautiful Sun Shine State. Beware of Gators, and Hurricanes!

It's near the end of hurricane season. Last time I was in Florida in October, I could have been in Wilma. Thank God I just left a day before it.

Be careful, take your time, make sure you have air conditioning, turn on your favorite tunes, drink lots of coffee and enjoy the ride.
The left hand steering wheel shouldn't really be a problem once you get the hang of it.
