oohh... lot's of ways! Try reading psychology books. But there are some tips I know like a person who lies can't look straight in the eyes of the person s/he's talking to. And another which I learned from CSI: when a person looks to the left, s/he is lying, to right, the other way around. An there's one test on how to spot fake smiles from the genuine ones.... It's hard to explain but to make it simple, the skin on top of your eyes "folds" down (don't know the term sorry) and "cover" your eyes because of the muscles. Fake smiles don't.

Well, reading just eyes isn't enough to understand the truth, But there are some main things you can read from them, lying usually makes eyes sensitive to light. being happy make them less sensitive.

when a person can't look at you straight in the eye, maybe the person is lying or the person likes you or the person is thinking of what to say or tell you...
but when the person can look at you straight in the eye, the person is telling the truth or the person loves you or the person listens to everything you say and is really concern about you and cares for you...
when you look at the pupil of the person's eye and you see it opens wide it means the person is interested in you or in what you are saying... if it's the otherwise then maybe the person is not interested...
