The possibilities are ENDLESS...... I guess for a quick, creamy dressing, combine lowfat sour cream, low fat mayo and a splash of cider vinegar with salt and white pepper to taste. Add some freshly minced herbs.
I like oven roasted tomato vinaigrette:
using about 1 dozen plum tomatoes cut in half lengthwise, marinade them in balsamic vinegar, salt, pepper and crushed fresh oregano. Place on a wire rack with the cut side down and place into an oven preheated to 200F. Cooking on this low temperature will dehydrate and concentrate the flavors. Next use a mixture of red wine and balsamic vinegar, and 1 tablespoon of dijon mustard place the tomatoes into a blender with the vinegars. Slowly drizzle either olive oil or grapeseed oil to emulsify the vinaigrette. This should keep up to 5 days covered in the refrigerator.
Really the only thing that limits you is what you can think of and your personal preferences for food. Good luck and happy dining.

how about a sprinkle of healthy olive oil and salt?
One of my favorite low-fat meals is a salad of any kind. I use this base as the dressing and then add other things depending on what I'm serving it with:
Low Fat , Low Calorie Creamy Salad Dressing
This is for one serving and it has 60 calories and 2 grams of fat.
2 Tbsp. Low Fat Mayo
1 Tbsp. no-fat half and half
2 tsp. red wine vinegar
a few drops of lemon juice
salt and pepper to taste
Sometimes I peel, seed and dice a tomato and add that to it. Sometimes I add a little tarragon and use it for chicken salad. The variations are endless depending on your own taste

Balsamic vinegar, Olive oil and a little reduced calorie parmesan cheese is very good ! on a salad. Also a little honey and mustard mixed togeter is also good. Or you can just use lemon juice or lime juice w/ some herbs and spices. take care.
