Im not quite sure if your are saying plastic jugs filled with water or the jugs alone,in any case if with water the water would be much more dangerous than something from the plastic.
If the jugs are the very clear kind that you buy water and soda in and make a cracking sound when squeezed, those are made from a very dangerous type of plastic.Im sorry I can't remember the name,It's been awhile since I worked the plastic industry, just burn one and sniff it you'll know.
If the jugs are old they may have been made when most plastic companys used a power colorant, very dangerous for the people who worked with it and a possibility of leaching into your water.
Most companies now use a pellet form of colorant much safer and mixes much better with the plastic so less chance of leaching out.
Most plastic bottles and jugs for the last 10-12 years have marks on the bottom telling you what type of plastic it is made from.
The choice I would make is better be safe than sorry and unless they absolutely have to be left in the sun a dark colored glass jug might be a better choice.

If there is bacteria in the water, the warmth from the sun will encourage the bacteria to grow.

If the plastic is soft, some of the chemicals in it could, theoretically, leach into the water.
