I generally make a baked potato and fresh garlic broccoli to eat with it but I would like to try something different so any addvice?

SEARED SALMON ON BABY SPINACH

2 7-ounce skinless salmon fillets
2 tablespoons (1/4 stick) butter
3 large shallots, sliced
1 1/2 tablespoons chopped fresh tarragon
8 ounces thinly sliced button or cremini mushrooms
6 ounces baby spinach leaves

1/3 cup dry white wine
1/4 cup whipping cream

Sprinkle salmon with salt and pepper. Melt 1 tablespoon butter in medium skillet over medium-high heat. Add salmon; sauté until just opaque in center, about 4 minutes per side. Transfer to plate. Melt 1/2 tablespoon butter in same skillet. Add half of shallots and saute 30 seconds. Add mushrooms and saute until tender. Add half of tarragon and increase heat to high; add half of spinach and toss 30 seconds. Add remaining spinach; toss until wilted. Divide between plates.

Melt remaining 1/2 tablespoon butter in same skillet over medium-high heat. Add remaining shallots and tarragon; sauté 30 seconds. Add wine and cream and boil until sauce is thick enough to coat spoon, about 3 minutes. Season with salt and pepper. Return salmon to skillet; simmer 1 minute. Arrange salmon with sauce atop spinach and mushrooms.

Serves 2; can be doubled.


This is the ultimate salmon recipe. I absolutely love this!! Its quick and easy and so delicious! I added the mushrooms per suggestions on Epicurious and doubled the amount of spinach. The original recipe can be found at the link below.

I usually serve this with oven roasted fingerling potatoes coated with olive oil, fresh oregano and minced garlic. Also great is a nice Beaujolais or Pinot Noir.

My mom serves it with rice...baked potato and fresh garlic broccoli sounds so gooodddd to eat salmon with....

my mom got this recipe from her cookbook...she marinates the salmon with ketchup and teriyaki sauce mixed together....then with the ketchup+teriyaki sauce mixed together on top of the salmon, bake it for about 15 mins with 350 degrees....then switch the oven off and let it sit in the oven for another 5-10 minutes or so...its SOOO delicious!! i eat almost every week =)

Try Orzo (rice shaped pasta) cook according to directions in 1/2 chicken broth and water. Add handful of frozen peas the last 2 mins of cooking (can substitute or add broccoli tops).
Add finely diced red onion, juice from 1/2 lemon, olive oil, salt and pepper.
Slice 1 onion and one green bell pepper in strips and saute in 1 Tbls olive oil and 1 Tbls butter, salt and pepper to taste.
Squeeze juice from 1/2 lemon over the onions and peppers and serve on top of the salmon.

Grill some asparagus, like this: coat with EVOO oil, then salt& pepper, put on the grill for 10 mins of in the oven on 400 for 15 mins.

Garlic Mashed Potatoes.

Apple Sauce

Grill the samon on a water soaked cedar plank for 25 mins on a out door grill.

I like to poach my salmon in lemon and serve with boiled new potatoes and vegs.

Although i do like rice with my fish, i sometimes do a fish stir fry with salmon, cod and prawns and serve wthis with rice.

Try rice pilaf. Works great. And some nice steamed seasonal vegetable, like broccoli, zucchini, and carrots. Put just a tiny bit of lemon juice and a pinch of salt over the vegetables.
