i love a ton of different cheeses ever since i finished culinary art school and got to try and make so many im addicted. I'm really into Bree its amazing with fresh blue berries, stuffed inside seasoned chicken, on salad, or served on a cracker with apricot preserves and Spanish almonds amazing party appetizer.

Yes, mild or medium cheddar if with crackers or alone, American or Provolone if on a sandwich, mozzarella works good with pasta.

Growing up I only liked American, but now it's a variety. Co-Jack and Provolone. Oh, and Mizithra (sp?) on spaghetti.
Shredded parmesan, too.
