I agree with the answers to put the cookies in a Ziploc bag after they cool and then pull them out and zap them in the microwave oven for 5 secs to get them warm and chewy again.

You might want to tweek your recipe some to make sure there is more moisture in them to start out with. Try this option:

Chewy Chocolate Chip Cookies
1 cup butter
2 cups semisweet chocolate chips
1 cup brown sugar
1/2 cup white sugar
2 eggs
2 tablespoons light corn syrup
2 tablespoons water
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons vanilla extract

As you can compare to your recipe the brown sugar is increased and the white sugar is decreased 1/4 cup each. Added corn syrup and water and increased vanilla extract to 2 tsp.
You can also make sure the cookies are slightly undercooked as stated before by an answerer.

Cookies are soft because they have a lot of moisture left in them. The best way to keep cookies soft is to seal them in a Ziplock freezer bag. Place the cookies in the ziplock bag lined by a paper towel and try to squeeze all of the air out before you zip it up. Keep the sealed cookies in a tin or any box that will not allow light in.

Never put cookies in the frig. because the cold air will dry the cookies out faster and therefore will make them dry and brittle.

I always nuke mine for just a couple of seconds before eating to get that "straight out of the oven" taste back. And it makes them really good with icecream!
