Black Tip is most often found in good grocers with a seafood section. Good fish won't flake along the grain, when it's raw. It should be very firm to the touch.
Black Tip is finished grilling when you push down lightly and the shark flakes along the "grain".
I miss shark. now I live dead smack in the middle of the country and never find "good" fresh seafood.

Yes,it's great to b.b.q. squeeze on a little lemon juice and melted butter.Shark is usually in thick steak form, don't over cook though, then it's to tough.Use left overs for soft tacos with shredded cabbage, tomato, and salsa in warm corn tortillas.
