Cheesy potato casserole. It keeps for a long time.
We also always cook extra taco meat and then use it for enchiladas the next day and taco salads after that.

I always overcook....lasagne, spaghetti, roasts, Thanksgiving dinner, Ham dinners, burrito stuffings, chilis....all casseroles. The leftovers are the best part!

Chili, then I put it in several individual containers and freeze it. It actually will taste better compared to fresh because the flavors mix.
