Why does chocolate get that white film over it. Does that mean that it is old? gone bad? It's not mold... I'm sure you know what I'm talking about. You go to a convenience store and get some reeses peanut butter cups and they're all white on the top. Ew. Why is that?

The fat in the chocolate separates from the cocoa. It is not harmful. It does mean the cohocoalte is old. I personally think that if I am going to have chocolate it should be the best so I would not eat it. I won't make you sick.

It has something to do with the separation of the chocolate and the milk solids that occurs because of temperature changes. I've eaten it without a problem after rediscovering a candy bar in my glove box several weeks later.

If I were to buy a chocolate bar at a store and open it up a few minutes later and saw the white stuff, I'd take it back and politely ask to exchange it for something else. If the store clerk gives you a problem or you continue to find the products stale and unacceptable, go to the manufacturer's web site. They would appreciate hearing from you.

That is called "bloom". It's just the cocoa butter separating from the chocolate. Warm temps and too long a storage time will cause this. It is still okay to eat or to use in cooking.

Yes, it's old and it has been exposed to the air too long. It won't hurt you but it's not fresh.

I think either because it has gotten hot at some point,, or is old.
