8-10 eggs
1 cup splenda
1/2 cup corn starch or arrow root
4 teaspoons vanilla extract
1/2 teaspoon salt
6 cups skim or low-fat milk, heated until very hot
Beat the eggs slightly. Add sugar, corn starch, vanilla extract, and salt then beat until dissolved. Mix in hot milk until blended. Bring to a low simmer and then freeze...If you have an ice cream maker, use that, otherwise you'll have to occasionally whisk/stir it up pretty good while its freezing.
Good stuff. Not unhealthy and easy on the calories.
For a more sherbet-y kind of ice cream,
put 1 part cottage cheese, 1 part yogurt, and 2 parts frozen fruit (of your choice) in a blender and blend it until smooth.
If its not sweet enough for you, add splenda to taste.
If it's too liquid for you, stick it in the freezer for a few minutes first. If it freezes solid, it gets pretty hard though.

mix the same amount of your favorite ice cream and non sugar plain yogurt.
if you like, add some fruits such as sliced banana, apple, strawberry, kiwi.

use a sugar substitute instead of sugar. this will reduce the sugar, also you could use Yogurt instead of cream. take out the egg yolks also and just use egg whites
