Dublin Beef Stew (Irish Stew)

Recipe (This is my mothers by the way)
you can vary the amount ingredients depending on what you like and how many people you are serving.

1 or 1 and a half lb of round steak
5 to 8 large potatoes
2 large onions
3 or 4 carrots
2 parsnips
half a cup of barley (pearl)
Dried parsley (usually a few teaspoons)
Dried thyme (a few teaspoons)
Pepper to taste.
A beef stock cube.
2 teaspoons of cornflour (to thinken)

Chop the meat into big enough chunks.
Get a big pot! Put the meat in the pot, with enough boiling water to cover the meat and then just a smidge more. now put it on simmer (lower the heat)
Peel and chop the potatoes in half (Not any smaller or they will just dissolve, they are supposed to be big chunks)
Chop the carrots and parsnip into disks.
Roughly chop the onions.

Throw all the veg in with the boiling meat,
add in the ground up stock cube.
Put the two teaspoons of cornflour in a bowl and mix with a few teaspoons of water to make a paste....then add this to the pot.

Add in herbs and pepper.

Now let this simmer away on a low heat for about 30-45 minutes or until you can run a knife through the potatoes smoothly....then get a ladle and some bowls and serve!

The longer you leave it to simmer the better!

You can fry round steak, but it won't be very nice, as its a tough vcut of meat, which is why, its traditionally boiled in soups and stews to soften it.

Enjoy!

Apricot Round Steak Recipe
1 3/4 pounds boneless top round steak (3/4" thick)
3/4 cup apricot preserves
1 T. lemon juice
1/2 t. salt
1/8 t. hot pepper sauce

Place steak on broiler pan rack; broil for 6-8 minutes on each side. Meanwhile in a saucepan or microwave-safe bowl, combine remaining ingredients. Cook until preserves are melted. Set aside 1/2 cup; brush remaining sauce over steak. Broil 2-3 minutes longer or until meat reaches desired doneness (for rare, a meat thermometer should read 140, for medium, 160; for well done, 170). Slice meat on the diagonal; serve with reserved apricot sauce. 8 servings

Round steak is good for cream of mushroom steak.

Sprinkle meat tenderizer on the steak on Perice with fork do all sides.

Fry steak on all sides till browned.

Put in crock pot. Mix up a Lg. can of cream of mushroom soup with milk. Pour over steak and cook until it is so tender that it could almost fall apart. This could take 3 to 4 hours.

You can also put steak in a lg cake baking pan and pour soup over it. Bake it at 350 for 1 to 2 hours or until tender. Stir your steaks and soup around to prevent the soup from burning.

Make mashed potatoes and use the cooked soup from your steaks as a gravy.

This is very good.

When I make this meal the whole family comes running.

The key to this meal is let your steak cook in your crock pot or oven until it is tender no matter how long it takes. And I suggest using Campbells Cream Of Mushroom Soup for the best taste.

One of the best ways to have a steak, (any cut will do) is to put it into a frying pan on medium heat and cut up some bell pepers, onions, mushrooms, squash and zuccini. Now throw it all together (keep the veggies on top of the steak) and add a little bit of beer into the mix, oh yes and on the steak put a dash of season salt, garlic pepper, and whostersier sauce (I am positive I spelled the sauce wrong) but anyways it tastes great and doesnt take too long to make... have fun ^_^

Do you mean "eye round" steak? If so, when you slice it, it is good for grilling. Broiling makes it tough. It always helps to marinate a steak like eye round. I l;ike any salad dressing which contains balsamic vinagrette. Or you could make your own w/ bals. vin., olive oil, s&p, oregano, dried basil, garli, etc. Experiment. If you get a eye round roast, it is tender when roasted @ 325 until internal temp is about 140. .
