Ingredients Needed For Momma's Homemade Salsa :
4 cups of tomatoes (peeled & chopped)
1 large onion (chopped)
4 tsp canning vinegar
2 1/2 tsp. canning salt
3 or more jalapeno's(depending on how hot you like it.)
2 cloves of chopped Garlic
1 tsp sugar
Chopped cilantro (the amount is optional depending on your preference; I usually use about 1/4 of the bushel)
Directions For Making Momma's Homemade Salsa :
My mother prefers her tomato's peeled so she gets a large pot of water boiling and dips each tomato in for a few seconds. Hot water will cause skin on tomato to pull away from tomato and make easier to peel. If you don't mind the skin in the salsa then just chop up tomatos normally. If you like chunky Salsa then leave tomatos just chopped or more pureed salsa then put your tomatoes in blender. I like to leave some chopped and puree some also to give a variety of my salsa.
For a little extra and to bring out flavor in jalapeno's you can fry them before chopping them up for Salsa. Just put them in a skillet and flip them over til they just start to get a charred crust on the outside of them and then they are ready to chop up.
Next mix all ingredients into a pot and bring all to boil. This is where you taste and decide whether you need more jalapenos or cilantro or onion or some people like to put a little chili pepper powder in. Just add whatever you like and make it your own. Let mixture simmer til gets thick and then you can start sealing in canning jars. You can eat right away or save for a fiesta.
Here is what you'll need to make absolutely Fantastic...
Heatlhy Homemade Salsa:
5-8 Tomatoes (depending on their size, or the amount of salsa you want to make)
Garlic (as much garlic as you feel is appropriate for your tastes... we'll be using 1 large clove of elephant garlic)
Jalapenos (2 or 3 depending on how spicy you like your salsa)
1/2 large red onion
1 large green bell pepper
First, chop up all of your tomatoes into approximately 1/2 inch cubes, and put them in your mixing bowl.
Then dice your 1/2 of a red onion, and your bell pepper, and put those in your mixing bowl as well.
You can see that its already looking pretty good... especially with a cold beer close at hand... not really critical to the salsa making process, but it does help as long as moderation is employed.
Then, you need to dice the jalapeno, after removing the seeds. A few seeds are ok, and the more seeds you leave in, the hotter your salsa will become. Also, make sure you wash your hands well after handling the jalapenos, so that you don't end up rubbing your eye with a jalapeno juiced finger- Ouch! Even an hour later, the dried juice on your finger will burn your eyes.
It is fairly important to dice the jalapenos pretty small, so that someone who might be more sensitive to spicy foods doesn't get a really big bite.
Once you have all of the vegetables in the mixing bowl, use a large spoon, or potato masher, or some other appropriate kitchen utensil to mush everything up. Don't get to carried away, as chunky salsa is best. I used a blender once, and the salsa came out too fine. It was still good, but it wasn't chunky at all. Avoid the blender.
Finally, pour it into a bowl that can be covered with an airtight lid, munch on it for a while, and then stick it in the refrigerator overnight. You may want to add a little bit of salt to taste, and most times, will also add just a bit of worshterschire sauce for some added zing... try it.

Homemade Salsa
2 (10 1/2 ounce) cans Italian stewed tomatoes
1 bunch cilantro
1 teaspoon jalapenos (out of the jar)
1 tablespoon jalapeno vinegar (more if you like if hotter)
1 tablespoon dehydrated onion
1 teaspoon salt
1 teaspoon fresh coarse ground black pepper
1 teaspoon garlic powder
Cut stems off of the cilantro bunch, and discard stems. Combine all ingredients in a food processor and blend intil desired consistancy. Place in serving bowl and enjoy. Good if served chilled.

I don't do a lot of measuring while I'm making this, but I'll estimate...... 2 to 3 large red tomatoes chopped 1 small onion chopped fine 1 Jalapeno de-seeded and chopped fine (My husband uses 2-He's crazy!) fresh cilantro chopped (get about 6 or 8 sprigs) Squeeze 1/2 lime course salt (to taste) 1 small can green chili's (optional) I like to serve this over softened cream cheese with tortilla chips. OOPS! I almost forgot the garlic! I usually chop about 4-5 cloves real fine. Put all this together and stir. Let it sit for a little bit before putting over Cream cheese to let the flavors blend a bit.

Buy a jar of Tostidos Brand Salsa and pour it into a nice bowl.
The nice bowl gives it the homemade look.

EVERYONE'S FAVORITE SALSA
8 large tomatoes
3 bell peppers (green, red, yellow, orange)
one medium sized onion
2-3 jalapeno peppers, to your taste (remove seeds for mild salsa)
1 bunch fresh cilantro
3 tbsp. lime juice (can use fresh squeezed)
3 tbsp. lemon juice (can use fresh squeezed)
salt to taste
Chop these all individually in food processor and combine as chopped.
These are all approximate amounts. You can change amounts of ingredients to your taste.
Use rubber gloves when cutting large amounts of peppers and onions or skin will burn!

Mix the ingredients and add more of whatever you like until you get it just right!
