Olive Oil is a great and healthy alternative to vegetable oil!
Or...you can always use butter, but turn the heat lower than normal because the butter will burn the chicken if on too high.
Again, you can go with the answers already made on your question and bake them, but they won't completely have the crispiness that frying gives.

You can bake them!!! In fact, here's a good recipe for your chicken strips.
If you want to make them the same way you always have, just follow the directions for the oven (I marked them with **).
Oven-Fried Chicken Fingers
1 cup low-fat mayonnaise
1 tablespoon curry paste, or more
Kosher salt
Freshly ground black pepper
4 skinless, boneless chicken breasts
2 cups panko (Japanese) bread crumbs
**Heat the oven to 350 degrees F.**
In a large bowl, combine the mayonnaise and curry paste, to taste. Thin this with a little water, 1 tablespoon at a time, until you get the consistency of heavy cream, and season with salt and pepper.
Cut the chicken breasts into thick strips. Drop the strips into the bowl and coat them well with the curry mayonnaise. Cover and refrigerate for at least 5 minutes or up to 1 hour.
Pour the bread crumbs onto a plate and toss the chicken strips well to completely cover them. Put them onto a nonstick baking sheet and into the oven.
**Cook for 15 to 20 minutes, or until the chicken is browned and cooked through.**

Melt 2-3 tablespoons of butter in your skillet before frying. I promise you that you'll love the flavor WAY more than when you cooked them in oil. After you buy some more oil, try using half oil and half butter to fry them in - this lowers the smoking point of the oil, which will help you to not smoke up your kitchen while cooking, and improve the flavor of your food!

Coat them in Honey Mustard dressing then roll in crushed potato chips. Finally bake at 400 for 10-15 minutes. They will still turn out crispy and they are very good.
But if you really want them fried, you can use shortening.

Melt a couple tablespoons of butter with a clove of smashed garlic. When melted, take out the garlic... Then pan fry your chicken !

Dip the strips in plain yogurt and then the bread crumbs. Then you can bake the strips.
