Yankee Rice Pudding

1 cup instant rice
1 1/2 cups milk
1/4 cup sugar
1/2 tsp. salt
1/2 tsp. cinnamon or nutmeg
1/4 cup seedless raisins

Combine all ingredients. Bring to a full boil, stirring constantly. Remove from heat; cover. Let stand for 15 minutes, stirring occasionally. Serve warm with cream. Yield: 6 servings.

Arborio rice pudding

1 cup water
Pinch salt
1/2 tablespoon butter
1/2 cup Arborio rice (medium-grain rice)
2 cups whole milk
4 tablespoons sugar
1 teaspoon vanilla extract
Few dashes ground cinnamon
Whipped cream, for serving

Bring water, salt, and butter to a boil in a medium saucepan. Add the rice, return to a boil, and then reduce the heat to the lowest setting. Shake the pan occasionally and cook until rice has absorbed the water but it still al dente, about 15 minutes.

Bring milk, sugar, vanilla, and a few dashes of cinnamon to a simmer in a separate saucepan. Add the cooked rice and cook at a simmer over medium-low heat until rice absorbs most of the milk and mixture starts to get thick and silky, about 10 to 15 minutes.

Transfer pudding to a large bowl and cool to room temperature. Place in refrigerator until cool and set. Serve with whipped cream and a dash more cinnamon.

P.S. this will taste even better if you add 3/4 C. raisins that have soaked in 2 Tbs. rum for a few minutes till they're plumped up - add the whole thing to the pudding.

6 eggs 1- 1/2 cups sugar 3/4 quart heavy cream 6 cups cooked rice 2 teaspoons vanilla flavoring 1cup raisin (opitional) Beat eggs ,sugar until completely mixed add other ingredients. Pour over cooked rice in casserole dish Bake at 350 degrees until lightly set mo more than 30 minutes,. Top should be golden brown . Can be served hot or cold .

Heres a recipe for a easy rice pudding :) tc

INGREDIENTS:
2 c. cooked rice
1/2 c. sugar
2 eggs, slightly beaten
2 c. milk
1/2 tsp. vanilla
1/4 c. raisins
1/2 tsp. powdered cinnamon
PREPARATION:
Place rice in bowl, add all ingredients, stir to mix. Pour into greased baking dish or pan. Bake about 25 minutes in a 350 degree oven

Basic recipe:- 4ozs pudding rice
2pints milk
2-3ozs sugar
1/2oz butter
grated nutmeg

Grease a 3pint pie dish.
Put in rice, sugar and milk and mix well.
Flake butter on top and spinkle with grated nutmeg.
Bake in oven on gas 2/ 310F/ 150C for approx. 2 and 1/2 hours.

You can add raisins or chopped apple if you want a variation.

Easiest rice pudding- take your cooked rice, no matter whether its instant, or long grain. To the cooked rice add sugar (to your taste. regular or diet), vanilla, and milk. Put a covering over it and heat it in the microwave a minute at a time til its heated through.
