I'm sorry, I'm sure someone will kill me, but Velveeta isn't that yummy. Homemade is really a lot better once you try it!
NACHO CHEESE DIP
1 (8 oz.) pkg. cream cheese
1 (16 oz.) pkg. sour cream
1 envelope taco mix seasoning
Chopped celery
Chopped onion
Chopped green pepper
Shredded lettuce
8 oz. shredded Cheddar cheese
Chopped tomato
1 lb. Nacho cheese chips
Beat sour cream, cream cheese and taco mix well with beaters. Stir in chopped celery, onion and green pepper. Spread in 9 x 13 inch pan. Top with lettuce, Cheddar cheese and tomato. Serve with Nacho cheese chips.

2 cans - Campbell's Nacho Cheese Soup
1 brick - Velveeta
1 can - Rotel Peppers (mild)
2 cans - cold water
Place all ingredients in a crockpot and melt slowly over a few hours.
Stir occassionally to prevent sticking.
Eat when everything is thoroughly melted!

REAL NACHO CHEESE
1/2 cup of monterrey jack cheese or mozzarella
3/4 cups of cheddar cheese
1/2 cup of heavy cream
heat up some heavy cream but do not boil it because the cream will curdle, and then add the cheeses and if you want it to be cheesier add some more cheese!

Nacho Cheese Sauce
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon paprika -- or chili powder
1 cup milk
1 cup shredded cheddar cheese or shredded Mexican 4 blend cheese
1/4 teaspoon ground cumin
3 drops Tabasco sauce or to taste
In a heavy 2-quart saucepan over low heat, melt butter.
Add flour, salt, pepper and paprika or chili powder to melted butter. Stir together over low heat until smooth.
Gradually stir in milk; cook, stirring constantly, until thickened and smooth. Stir the shredded cheese, ground cumin and Tabasco into the hot white sauce. Cook over very low heat, stirring constantly, just until the cheese is melted. Serve over tortilla chips for easy nachos.

Velveeta or Cheez Whiz. The stuff they use is processed to oblivion and back. I don't think they can legally refer to it as cheese - its "cheese food".
I don't eat anything that actually has to call itself "food" on the label. Like if it didn't I'd think it was spackle.

I have made a wonderful salsa con queso. You just take velveeta or cheez whiz, and add regular salsa to it, microwave and stir during the melting process. It is wonderful, you can use any kind of salsa you like.......Enjoy!!!
