Yes. Cats can have litters of between 1 to 12. It all depands on the age of the cat, the number of pregnancies, and the length of times between litters/pregnancies.

yes but, my cat had 3 kittens and they came like a day apart...but that was because the were pre mature and it was the cats first litter

It is not very common, but yes cats do occasionally have only one kitten.

the average litter size is 3-6 kittens, sometimes up to 8.
