Here is one of which you can leave almost every thing away, just not the avocados ;-), limes/lemons and salt
We have it often for dinner:
8 ripe but not too ripe avocados. Yellow soft but no brown spots.
4 limes, 2 lemons
salt (I use a lot, do it to your taste)
The most simple is to mash all that and have nice Guacamole.
It's getting much better however if you have any of the following or all of them:
1 onion
one bundle cilantro
2 Jalapenos
well - yeah - one or two tomatoes, not really required.
Chop the onion fine, and chop the Cilantro medium fine, chop the Jalapenos.
Now you put the peeled Avocados (stones removed) into a large bowl. Squeeze the limes and lemons and pour all the juice over. It's important to do that soon after the Avocados are in, it prevents them from getting brown.
Put the salt and all the chopped stuff in and start mashing with a potato masher. Or you can use a knife and fork. Don't mash it too fine, some chunks add to a good texture.
And - if the universe provides you with a tomato - then after you are done with all the mashing you can cut the tomato in tiny pieces and carefully mix that under.
Variations:
Use more limes or more lemons or only lemons - try what you like best.
and serve...my favorite are those hot spicy blue corn chips to go along with.
Some people put cheese in, I think this is not a good fit.

Easy Guacamole Recipe
2 ripe avocados
1 small onion
1 clove garlic
1 small tomato
1 1/2 Tbsp lime juice (or juice of 1 fresh lime)
salt and pepper to taste
Peel avocados and remove the pit (see below for a neat idea on how to use the pits)
Peel and mince the onion and the garlic
Chop the tomato.
Mash the avocado in a bowl (fun for the kids) and then stir in the remaining ingredients.
Serve cold with tortillas
Additionally : for holy guacamole , same recipe - scratch the tomatoes

I love Guacomole...here is my fav recipe. You gotta have tomatos, its just not the same w/o it.
2 ripe avocados
½ red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped
Garnish with red radishes or jicama. Serve with tortilla chips.
1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.)
2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours.
Keep the tomatoes separate until ready to serve.
Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste.
3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.
4 Just before serving, add the chopped tomato to the guacamole and mix.

The best thing you can do is go to Von's and buy Avo Classic Guacamole. This stuff is real avocado mashed, seasoned, and ready to serve. It tastes better than the avocado they have in the produce department because it isn't all black or too hard or too soft. You always get perfect guac! All you have to do is add a little lemon juice if you want and some jalapenos if you like it spicy.

Basic, not fancy, really simple. Remove skin and pit from avocado. Coarsely mash with a fork. Add salt to taste, a short squeeze of lemon or lime juice and sprinkle with cayenne pepper. Mix it up. That's it.

I ripe avacado, tables spoon of minced garlic, 1/2 cup of chopped cilantro. Mash the avacado, with with the garlic and cilantro. Put the stone from the middle of the avacado in the guacamole to keep fresh.

1 half cans of chopped black olives
2 green chillies chopped fine
dash of salt
mix together and serve with fried flour tortillas that have been cut in 6 pieces each or with nacho chips
a little different than most but so good

The most E-Z way to make guacamole: scoop the flesh out of a ripe avocado use a fork to squish it up with a tablespoon or more (to taste) of your favourite salsa from a jar.

Just get a jar of salsa and mix it with a mashed avacado...or you can make homeade salsa which is way better and add it to the avacado...without tomatoes you won't make guacamole.

Very basic!!
Crush 2 avocados with a little bit of lemon juice.
Add 2 shallots or green oignons.
Add half of a red sweet pepper (or green).
If you like it spicy, add a fine cut jalapeno pepper.
Add a tomato... if you have one!
Crush all this with two forks and enjoy!!! :)
