The easiest kind of frosting to make using whipping cream (or it's fake cousin, Cool Whip) is to take a medium tub of Cool Whip and gently fold in your choice of instant pudding flavors along with a little milk. Blend gently until the pudding mix and milk is completely dissolved into the Cool Whip. This makes a light and refreshing frosting compared to the heavier kinds made with butter or shortening.

It's easy....Pour whipping cream into a bowl (and it doesn't need to be chilled) use a stand mixer or hand mixer slowly going to high speed (that's so you don't slosh the cream out of the bowl). Beat until stiff peaks are formed. Add sugar to taste and a few drops of almond or vanilla extract. If you want color add food coloring. Chill the mixture for about an hour and then ice the cake. And make sure the cake is cooled because if it is still warm the whipped cream will slide off.

While whipping - sprinke in with a sifter, confectioners sugar,... the really fine stuff.
Colouring is optional, food colouring works fine, but blend that in before you whip the whipping cream.
Of course - dearie, the bowl should be chilled,.... duh.
If you rather use a short cut, just get the new strawberry coolwhip, its really pretty good. And chocoalte sprinkles helps, or the fruity coloured ones are fine too.
Actually coolwhip holds up a little better in the heat than fresh whipped cream, and if you fold in drizzles of food colouring, it imparts some really cool swirls to the coolwhip.
***** uh guys,... didn't she say she wanted a LIGHT icing? If you add more flavour with pudding, wont that over power the cake? What would the point be of it being LIGHT - if it wasn't really light?

Whipped Cream Frosting

Whipped Cream Frosting is one of the lightest cake icings you can make.
INGREDIENTS:
2/3 cups white vegetable shortening
1/3 cup butter, softened
1 pound powdered sugar, sifted
1/4 cup heavy or whipping cream
1 teaspoon clear vanilla
PREPARATION:
Cream shortening and butter. Slowly add powdered sugar. Combine completely. Slowly add cream and then vanilla. Beat for 5 minutes on high. Keeps for weeks in the refrigerator.

2-3 ounces granulated sugar per quart, a little vanilla, Place bowl whisk and cream inf freezer for 10 minutes. This will help keep the whip cream stiff. Whip cream and sugar and vanilla until stiff. keep in frig until ready to use. The cream doubles in size, so if you have a quart of cream it will yield, 2 quarts. Do not over whip or your cream will turn to butter.

INGREDIENTS:
1/4 cup cold water
1 teaspoon unflavored gelatin
1 cup heavy whipping cream
1 tablespoon white sugar
1/2 teaspoon vanilla extract

DIRECTIONS:
Chill mixing bowl and beaters for at least 15 minutes before using. Place water in a small microwave-safe bowl. Sprinkle gelatin over water and allow to soften 5 minutes.
Dissolve gelatin by microwaving for 3 minutes, stirring after every minute. Remove from microwave and let stand at room temperature for 10 minutes; gelatin must be liquid but not warm when added to cream.
Remove bowl and beaters from refrigerator and pour in cream, sugar, and vanilla extract. Beat together just until beater marks begin to show distinctly.
Add gelatin mixture to cream, pouring in a steady stream while beating constantly. Beat until stiff peaks form. Use immediately.

Whip the cream well till it stands at stiff peaks then add powdered sugar beating well...then add a bit of almond flavor ...I love it on my angel cake and i sometimes tint it sunny yellow too

Add some sugar (teaspoon) and use chilled cream.
Icing by definition is just sugar with some water and coloring.

I do this for all my cakes. It is wonderful. Just make a box of pudding using only one cup of milk. Then add a large container of whipping cream. You can use any flavor of pudding to make any flavor of "frosting". It is so yummy!
