Definitely add a sprig when you are boiling the potatoes, this will go soggy and must be removed before serving, but then you can add a fresh sprig for garnish. Boiling the mint does not dilute it but brings out the taste like any herb used in cooking.

I've never cooked minted potatoes but I know they come with mint when they are being served. Maybe if it's powdered mint you can put a little in the boiling water, unless that makes them too strong.

How minty do you want them? I add to water for hint of mint, add chopped raw mint to cooked potatoes and sour cream for potato salad. chopped mint and butter to hot boiled new potatoes (especially Jerseys) for new potato heaven. If serving with fresh peas, leave the mint out of the potatoes and put it in the peas

if u like mint favor in food put it in water before it boil and let it to boil with water 3 minutes and then put potatoes i wish i could help you.

I always put lots of mint in when i'm boiling them, but only at the last 5 mins.It's personal choice though

I've never heard of using mint, but I use dill sometimes. You would put it in when serving them.
