My favorite way to cook zucchini is on the grill.
Heat your grill (preferably a gas grill) to a med-high heat. While your grill is warming up slice off the ends and then cut into 1/4 tp 1/2 inch thick slices down the entire length of the vegetable. Sprinkle on some salt, pepper, garlic, and any other favorite seasonings and then put on the grill. They are done when you start to get dark lines on the grilled sides and are heated all the way through.

Steaming is always good. Plate it and add a little butter after steaming.
Use it in soups or salads.
Pour a can of tomato sauce in a saucepan over medium heat. Add kosher salt, ground black pepper, dried basil, sage and oregano. Add sliced zucchini and simmer until done. Plate it and sprinkle with some mozzarella or other cheese.
One of my favorites is deep fried zucchini. Lightly beat an egg in a bowl. Place some flour in another. Sprinkle sliced zucchini with some kosher salt and ground black pepper. Dip in egg and then dip in flour. Fry it as you would french fries. Really tasty.
You could make zucchini bread.
INGREDIENTS:
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts
DIRECTIONS:
Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Shred the zucchini with a grater or food processor and put them into sealed bags in the freezer. Use it this winter when you aren't so sick of them to make zucchini nut bread and to add to all your soups for a healthy thickner that tastes great. You can also fry them as hash browns.
Use a french fry cutter and cut them into french fries and fry after rolling in just flour. My kids always loved them that way and they really do taste like french fries. That usually uses up quite a few in the summer.

shred the zucchini and sprinkle salt on it to help it release some moisture, set in sink in a colander to drain. Then put it in a bowl, add a beaten egg and a little flour to help it stick together, then drop spoonfuls into a greased hot frying pan and make zucchini patties. They really are good.

Cut them into chunks and boil in water with chunks of tomatoes and stirr in some salt and pepper for taste. chill for an hour serve cold as a side dish. Goes great with steak or pork chops.

use it on pizza, stir fry, take angel hair pasta, toss with olive oil,tons of Parmesan,basil and garlic, use fresh in salads, steam it with bay leaf and rosemary, make zucchini bread.

Slice it up, Sautee in butter, season with salt, pepper and toss in some freshly grated asiago cheese and toasted almonds. It is delicious.

I like to cut them lenght wise, scoop out the center, put a little olive oil on them. season with salt and pepper, and melt some garlic butter and spread on them and grill them until tender. then turn them over and put pre seasoned hamburger anyway you like in the center andsprinkle cheese over meat and leave them on grill until cheese starts to melt.

one good way is to do this...
cut them up in chunks with red potatoes and put them in a frying pan with butter and garlic salt and some pepper...cook til done...my kids love it
