my stepson is here visiting for 2 weeks, and I would like some simple favorites of yours, to get me through! Recipes would be wonderful, and I may 'blog' this, too. Thanks. Mair

You should buy a premade pizza crust, like boboli and buy a couple different toppings like pepperoni, sausage and of course you should have some kind of veggie. Also, just buy some pizza sauce and shredded cheese.
The best part of this dinner is making the pizza together, having your stepson pick out what he wants.
Maybe for dessert you should make a choc. pizza. Buy some nutrella spread and then be creative , marshmellos, white choc chips, chopped nuts.
I promise your stepson will love it.

How about Taco Salad? Some kids love this I know my neices and nephews love this and it isn't complicated either! Plus it gets better each day!
3 lbs. lean ground beef
1 head of lettuce (chopped)
1 vidalia onion (chopped)
3 cans red kidney beans, drained
1 taco seasoning (mild)
1 chili seasoning (spicy)
1 bag of shredded cheddar cheese
1 bag of Doritos
1 Thousand Island Dressing (1 Bottle)
Brown hamburger in skillet and break up the big chunks into smaller more manageable pieces. Add your onion and cook until the onion appears to be soft. Remove from heat. Stir in your lettuce, beans, seasoning, cheese, the whole bottle of Thousand Island Dressing and mix thoroughly. Garnish the sides and top with crushed Doritos. You can add more Doritos as you go to!
You can either eat it warm or cold! Store leftovers in a covered bowl and put in refrigerator.
Makes 8 servings.
To go with this:
Have some homemade Lemonade or store bought iced tea
For dessert:
Buy yourself a fruit pie of your choice!
Good luck and I hope your family likes this as much as mine does!

Carbonara
Ingredients:
Salt and freshly ground black pepper to taste
1 pound pasta, such as spaghetti or rigatoni
1/4 cup extra virgin olive oil (enough to coat bottom of pan)
1/4 pound pancetta (Italian bacon),
chopped 1 teaspoon
red pepper flakes
5 to 6 cloves garlic, chopped
1/2 cup dry white wine
2 large egg yolks
Freshly grated Romano cheese
Handful of finely chopped fresh flat-leaf parsley, for garnish
Directions:
1. Put a large saucepot of water on to boil. Add a liberal amount of salt and the pasta. Cook to al dente, about 8 minutes.
2. Meanwhile, heat a large skillet over medium heat. Add the olive oil and pancetta. Brown pancetta 2 minutes. Add red pepper flakes and garlic and cook 2 to 3 minutes more. Add wine and stir up all the pan drippings.
3. In a separate bowl, beat yolks, then add 1 large ladleful (about 1/2 cup) of the pasta cooking water. This tempers the eggs and keeps them from scrambling when added to the pasta.
4. Drain pasta well and add it directly to the skillet with pancetta and oil. Pour the egg mixture over the pasta. Toss rapidly to coat the pasta without cooking the egg. Remove pan from heat and add a big handful of cheese, lots of pepper, and a little salt. Continue to toss and turn the pasta until it soaks up egg mixture and thickens, 1 to 2 minutes. Garnish with parsley and extra grated Romano.

How old is he? I like pasta with cream sauce. Toss in diced chicken bits and some veggies. Serve with salad and garlic bread.
Omelets: with mushrooms; bell peppers or any other add-ins you like.
Salad: put in walnuts; cranberries; grapes.
Turkey burgers: they are nice and juicy with lots of flavor. Put them on a sourdough roll, not a regular hamburger bun.
Tuna/egg salad.

BBQ hamburgers and then make some french fries on the side. We also like tacos! Another thing we like to make is chef salads. I let the kids pick what ingredients they want on their salads and each kid gets their own individual salad.
