Dehydrate some, make apple sauce, squeeze some to make cider, bake a few pies and put them in the freezer, give some to the old folks home or the local school, or a charity for the poor that takes food. Also take some to work and share. Share with the neighbors too.

I recommend crock pot apple butter. It is so easy.. Peal and core enough apples to make 9 cups chopped. (use your food processor ) put the apples along with 4 cups sugar,1/4 cups cider vinegar and 1 Tbsp.Cinnamon, 1 tsp.cloves, and 1/2 tsp nutmeg. You can use more or less depending on how spicy you like it. If your apples are not very juicy , you should cook with the lid on.mix all together and put into a 2qt or larger crock pot before you go to bed. leave the top off. When you get up, stir and check the consistency. Complete cooking time takes from 10 to 15 hours depending on crock pot. stir occasionally. When apples thicken so that they cling to a spoon then they are ready. pour into canning jars and put into a boiling water bath for about 15 minutes. You can use this recipe with Jarred apple sauce from the store.

After harvesting, the fruit is crushed, or scratted, in the cider mill. After crushing, the pulp, known as the pomace or pommage, is wrapped in cloth, ready for pressing. The pomace cloth is generally made from nylon, but some traditional cider-makers still press their apples through straw. The wrapped pomace, often known as the cheese, is then placed on the cider press and the unfermented juice, or must, is extracted by applying varying amounts of pressure.

Once when I went apple picking I prepared a double batch of apple pie; I froze one pie-worth of prepared apples in a freezer bag. That was at least a year ago (I think it might have been two); I found them in the back of my freezer a couple weeks ago, thawed them, and made a crumb-top apple pie that we shared with the neighbors; it was delicious! I will definately do it again this fall, but hopefully I'll freeze more pies worth. It keeps so well. When you're ready to use it, it's like instant homemade pie.

turn it into apple cider, it is the best!! I do it every year! You cut them into pieces removing the cores, place them in a wooden container with no bottom but with a filter that goes in it like a garbage bag would. place a lid on the top, and a jug underneath then crush it. there is a manual use machine you use similer to this but I don't know where to get one.
